Putty is an ssh (secure shell) client for Windows machines. It serves
as a secure replacement for telnet. (Putty will
connect using either ssh or telnet; be sure that you've clicked on
"ssh" to get an ssh connection.)

Winscp is a secure shell (ssh) replacement for ftp. It has a very
nice graphical interface that is much easier to use than ordinary ftp.
(When installing itself, it offers a choice of interfaces; I recommend
the "Norton Commander" type interface, but this is a matter of
taste. When using this, your window will be divided into two panes,
with your local (windows machine) files on the left and the remote
host's files on the right.)

niftytelnet ssh
Niftytelnet ssh is a Mac application that allows Mac users to connect
using secure shell (ssh), which is a secure replacement for telnet.
Niftytelnet ssh also has an scp (secure copy) facility that serves as
a replacement for ftp.
